story

The cochadas from disruptiva is always a favourite. Not only for its amazing flavour and forgiving brewing style, but because it helps reduce labour and increase traceability on the farm!

It’s a washed blend of castillo, an amalgamation of a week’s worth of day lots. Each lot is pulped and washed the day its picked, then left to ferment in open ceramic tanks, covered with water. This results in an average fermentation time of 3.5 days and a juicy, exceptionally clean cup.
